Blanch times for freezing

Here are some charts and info for amounts of time to blanch fruits and vegetables before freezing.

One thing I learned is that apricot skins will toughen when frozen if not blanched first. Who'd'a'thunk it?

Thanks, learning to can (and convincing my sister that its something useful) is high on the list for things to do this Fall.

I certainly enjoy all of the canned goods I put up each year. There is something very satisfying in looking a counter full of cooling jars of stuff you made.
