Do You Dehydrate Eggs?

My mother got her first set of chickens a few weeks ago. She called me the day she got them, since one of them had already laid her first egg.

I've bought eggs from people who raise them, and I know that during Winter the chickens tend to cut back on the number they lay. For those who raise birds for eggs, do you make plans for the slowdown by dehydrating the excess in the Summer and then using that during the Winter?

The process seems to use a bit of energy. I'm starting to think setting up a solar oven in the backyard as a full time Summer item might be useful.
